Scope Of Work
This facility houses the most automated and fastest bun baking and freezing process in the world, producing approximately 1,400 buns per minute with virtually no production workers on the floor. With approximately 70,000 square feet of processing floor space, the entire process is fully automated from the ingredient measuring and mixing, through the proofing and baking stage. An automated conveyance system carries the finished product to a fully automated inspection process, and then to slicing and packaging without any human interaction. All product is automatically transported into the 13,500-square-foot, 56′ high minus 10- degrees freezer, which contains a fully automated racking and storage system. Product is frozen within a strict time limit, and automatically transferred to a refrigerated dock for transport.
